Instant Pot Vega Slow Cooked Hoisin Miso Ginger Glazed Tofu
INGREDIENTS:
- 4 scallions thinly chopped
- 1 lb extra firm tofu cut into 1/2-inch cubes
- 1/4 cup Hoisin Sauce
- 2 tbsp miso paste
- 1 tsp honey or brown sugar
- 1 tsp rice vinegar
- 2 tsp ground ginger or 1/2 tsp fresh ginger, grated
- 2 garlic cloves minced
- Half red finger pepper seeded and small diced
- 1/4 cup vegetable broth or water
- 1 tsp sesame oil
- 1 tsp sesame seeds
INSTRUCTIONS:

Add the hoisin, miso paste, honey, rice vinegar, ginger, garlic, red finger pepper, sesame oil, sesame seeds and vegetable broth. Whisk together.

Add the cubed tofu into the pot; stir in.

Close the lid. Set valve to release.

Select SLOW COOK-Low and set the time to 3 hours. Press START.

Once the cooking cycle is done, press CANCEL.

Serve the tofu with sauce from bottom of pot and garnish with extra scallions, red finger pepper and sesame seeds if desired.
